Hot Chicken Salad {TCS food}

We’re studying hot and cold TCS foods in foods 2. Today’s lab was hot chicken salad and waffles.

Students were responsible for taking temperatures on a log and taking corrective measures when the foods wasn’t hot enough.

Because the chicken salad was made from cold cooked chicken. Students had to heat the salad to proper holding temperature.

We broiled the tops of the chicken salad with french onions to make them yummy.

Though the looked hot and yummy, the temperature was not 135 degrees yet.

After some additional time in the oven, the chicken salad was finally the right temperature.

Temperature above 135 and students were ready to dig in to hot chicken salad and waffles.
